Tío Pepe Fino Sherry is a celebrated fino wine from Jerez, Spain, produced by González Byass. Made from 100% Palomino Fino grapes, it is fortified to ~15% ABV and aged under a layer of flor yeast via the traditional Solera and Criaderas system in American oak butts. The biological ageing protects the wine from oxidation, resulting in bright freshness and subtle saline complexity.
